Tom Collins is a classic gin-based cocktail which dates back to the 1800s. It must be good to have lasted through the centuries. It’s key is its simplicity. You don’t need anything fancy to create this cocktail, which means it is very easy to make at home.
Tom Collins is a long drink, served in a Collins glass (which is slightly taller than a highball glass.) It is the perfect balance between sweet, tart and bubbly, with a kick of gin. Essentially it is an effervescent lemonade, with spirit! It is very refreshing on a hot day.

History of The Tom Collins
There is a lot of speculation about how the Tom Collins cocktail was invented. What we do know for certain is that the first published recipe for a Tom Collins was included in Harry Johnson’s 1882 book, “New and Improved Bartender’s Manual: Or How To Mix Drinks Of The Present Style.”
The cocktail originated in England and John Collins, a bartender at Limmers Hotel in London is credited with creating the cocktail. The recipe in Johnson’s book called for ‘Old Tom’ gin to be used as the base. Today, a Tom Collins can be made with any style of gin.
There are several members of the Collins ‘family’ using different spirits. Joe Collins uses Vodka, Juan Collins uses Tequila (and lime juice instead of lemon juice), Pedro Collins uses white rum, Jack Collins is made with calvados, Jock Collins with Scotch Whisky, Captain Collins with Canadian Whisky and Colonel Collins with Bourbon.
How to make a Tom Collins
You will need:
- 15ml sugar syrup (you can buy sugar syrup at a liquor store, but it is easy to make your own in advance, recipe below)
- 25ml lemon juice
- 50ml Old Tom gin (or your favourite style of gin)
- Soda water
- Lemon slice, to garnish
Add a DrinksPlinks Unconventional Slab to a Collins glass, then the sugar syrup, lemon juice juice and gin. Stir thoroughly and top with soda. Garnish with a slice of lemon.
(You can also shake the sugar syrup, lemon juice and gin in a cocktail shaker with ice, then strain it into a glass with fresh ice, top with soda and garnish.)
To Make Sugar Syrup
There are many cocktails that call for sugar syrup. It is available to purchase, but is very easy to make your own. Just allow enough time for the sugar to cool before using it.
Mix equal parts of sugar and water (eg 1 cup of sugar and 1 cup of water), combine in a saucepan on the stove. Bring the mixture to the boil, stirring constantly to dissolve the sugar. Once it has boiled and there are no traces of sugar, let the mix cool. Pour the sugar syrup into a squeeze bottle and keep it in the fridge ready for cocktail hour.
