What you need

A shot (or few) of Heathcote Chocolate Gin
A shot of espresso coffee
2 scoops vanilla ice-cream
Fresh mint
Teaspoon of caster sugar
Chocolate shavings (to finish)

What you do

In a mortar & pestle, combine fresh mint and caster sugar
Add a scoop of vanilla ice-cream in a gin glass
Pour over Chocolate Gin and espresso shot
Sprinkle the fresh mint/sugar over the top
Garnish with grated chocolate and fresh mint sprig
